Curious in the Kitchen

While browsing through Moptop mavens fashion and style blog  came across this AMAZING recipe  for tortilla soup. Im Not really one to collect recipes or to experiment to much in the kitchen but I thought it would be a great way to end a rainy day in LA and how hard could it be?  I cant tell you how excited I was the WHOLE time it was simmering! I hope you all enjoy! 
P.s Two notes I wish would have known. 1. This recipe serves a whole lot so if you have a home of two consider  reducing recipe by half. ( we literally have enough tortilla soup to feed an army lol ) 2. The spicy element all depends on how much chilli powder you add. I personally would have liked it to be a bit more spicy , the original recipe is pretty mild.
Spicy Tortilla soup

4 cups water
4 skinless, boneless chicken breast halves
1/4 teaspoon salt
1/2 teaspoon ground black pepper
1/2 teaspoon garlic powder
2 tablespoons fresh parsley
1 handful of chopped cilantro
1-1/2 teaspoons onion powder
2-1/2 cubes chicken bouillon
1 tablespoon and 1-1/2 teaspoons olive oil
1/2 onion, chopped
1-1/2 cloves garlic, chopped
1/2 (16 ounce) jar chunky salsa
1 (14.5 ounce) can peeled and diced tomatoes
1/2 (14.5 ounce) can whole peeled tomatoes
1/2 (10.75 ounce) can condensed tomato soup
1 tablespoon and 1-1/2 teaspoons chili powder
1 small bag of frozen corn
1 (16 ounce) can black beans, drained
1 (16 ounce) can kidney beans, drained
1/2 (8 ounce) container sour cream


Directions
In a large pot over medium heat, combine water, chicken, salt, pepper, garlic powder, parsley, onion powder and bouillon cubes. Bring to a boil, then reduce heat and simmer 1 hour, or until chicken juices run clear. Remove chicken, reserve broth. Shred chicken. 

In a large pot over medium heat, cook onion and garlic in olive oil until slightly browned. Stir in salsa, diced tomatoes, whole tomatoes, tomato soup, chili powder, cumin, cilantro, corn, beans, sour cream, shredded chicken and 5 cups broth. Simmer 30 minutes.

Merry Christmas!

I have been so busy lately with Christmas shopping and the usual running around that I haven't Had a chance to blog like I would like to. We have finally got into the xmas Spirit and got a TINY little tree :) (it works for us) and let me tell you, you cant beat $9.00 for the whole thing. This year I was hoping that I could really go all out and spoil everyone with the gifts they really wanted but unfortunately times are tough and I couldn't. At first I was soo disappointed and really down about it.Then after talking to my mom and my aunt terry about what it is to give and receive a gift I realized that the special feeling of getting a gift is not in the quantity or labels. When I receive a gift I feel special because someone took the time out to not only think about me but to also spend what they had to buy something they thought I would like. A lot of time and effort goes into each gift and that's a gift in itself. So this year I wont be giving out as many material things as I usually do but there will be no lack of love, hugs and kisses... Im looking forward to spending time with my family, my sisters, my nephew, my boyfriend and most of all my mommy. The love I get from all of them is the best Christmas gift I could ever receive. Merry Christmas to you and yours, make the best out of each moment this season and Give as much love as your heart can hold <3

Mommy and Me!


Last night I spent the night at my Mommy's house and we had the best time! She took me to Harry's Hawaiian grill (yum) and we had a fruity cocktail and yummy snacks. THEN when we got home we talked and talked and laughed and giggled all night lol. We made fun of people and each other it was so much fun! then we went to sleep in her big bed with all our puppies :) much needed mommy daughter time.I love my mom so much no matter what I am going through she can always put a smile on my face. She is the Epitome of love, kindness,strength, courage and GLAM  <3

Its been a long week and im definitely looking forward to the weekend! I wanted to post this awesome t- shirt as a throw back to my childhood Friday nights! I Spent most of them at my aunt rose's house watching full house, boy meets world and of course family matters (the urkel show) with my cousins Leanna and Elisa. I wish we could just go back to that time and sit in the same'ol living room and have slumber parties and eat snacks and just hang out without a care in the world :) that's it im calling ABC and telling them to bring back "TGIF"!

Broken Car = Broken Hearts

Ok. So yesterday my car decides she wants to blow spark plug while I was on my way to pick up new break pads for her! Rude. So obviously I had to call Triple A to come out and tow her back to our house. Needless to say an unexpected $230.00 gone. After talking to the mechanic I realized  it wouldn't be a quick fix an I would have to call out from work ( Im a nanny to three adorable kids 3,5,and 7) . Cut to today my car is running good, breaks are on and im back in business. After picking up all three kids, we are in route to there house my 3 year old says (in a sad little voice): "why didn't you come to my school yesterday and pick me up?" her brothers co-singing her question (equally as sad) with "yea how come?". At this point I realize that they were genuinely disappointed in me for not following our routine. So I told them what happened and  that it wouldn't happen again and my 3 yr old replies "good because I was worried". I dont know why but it really meant a lot to me.. I guess knowing that they like me and im doing a good job of est. normalcy or some kind of routine where they count on me?  It feels good to be counted/ depended on I guess I had to hang out with a bunch of kids to realize it. <3

The first step

 As of late I have felt a shift in myself. Something that may be uncomfortable at times to admit but I am sure everyone probably goes through. I feel there is a certain disconnect between who I was to who I am. As coincidence might have it, while building this blog I came across this picture that confronted exactly what I am going through. So here it is kids! My promise to Replace Fear Of The Unknown With Curiosity. This blog will be my stepping stone to self love and expression. By doing so I hope to embrace all of my fears with the scene of curiosity children have and maybe learn what kinds of things I like and dislike. In time I hope that I can look through this compilation of ME and say "I am who I am and I LOVE IT!"
